They cultivate over thirty-five varieties of apples using biodynamic methods in their own Eden Orchards, overseen by their dedicated orchardist, Benjamin Applegate. In crafting their exceptional Eden Ciders, the team presses heirloom and tannic apples immediately upon harvest, aiming to capture the full spectrum of aromas and flavors at their peak. Employing a slow and cold fermentation process, the ciders are allowed to evolve with the depth and nuance akin to that of fine wines. Eschewing the addition of sugar, they rely solely on the natural sweetness inherent in the apples, resulting in a range of ciders with varying levels of residual sweetness.
