Eden Ciders

  • Eden Ciders, founded in 2007 by Eleanor and Albert Leger, celebrates the rich flavors of unique apple varieties grown by local Vermont orchards. Eden's mission is rooted in supporting Vermont's agricultural working landscape, spanning from their holistic estate orchards to their collaborations with local orchard partners. Their cider-specific apples are pressed once a year during harvest and undergo aging before bottling. Eden takes pride in crafting unique and innovative ciders that showcase the rare tannic and heirloom apples they use, all while adhering to a philosophy of minimal intervention in their production methods.

  • Eden values its growers immensely, maintaining enduring partnerships with them year after year. They cultivate over thirty-five varieties of apples using biodynamic methods in their own Eden Orchards, overseen by their dedicated orchardist, Benjamin Applegate. Together, they navigate the challenges presented by Mother Nature's weather patterns, supporting each other to guarantee the production of high-quality fruit and ciders.

  • In crafting their exceptional Eden Ciders, the team presses heirloom and tannic apples immediately upon harvest, aiming to capture the full spectrum of aromas and flavors at their peak. Employing a slow and cold fermentation process, the ciders are allowed to evolve with the depth and nuance akin to that of fine wines. Eschewing the addition of sugar, they rely solely on the natural sweetness inherent in the apples, resulting in a range of ciders with varying levels of residual sweetness.
