Iruai Wine

  • Iruai Winery ("ear-oo-eye"), formerly known as Methode Sauvage, was founded in 2013 by Chad and Michelle Westbrook Hinds in Berkeley, CA as a nomadic natural wine project. In 2019, they established roots in Michelle's hometown of Etna, CA, in the Shasta-Cascade mountains of Siskiyou County. Transitioning from an urban winery to the vigneron lifestyle, Iruai Winery explores avant-garde vineyard planting and rehabilitation techniques inspired by Masanobu Fukuoka's permaculture methods, while developing their own "chaos organics" approach to revitalize the land. The unique landscape of Scott Valley in Western Siskiyou County resembles a mix of Switzerland and Montana, with a rain shadow from Mount Shasta creating a stark division between high mountain prairie and dense alpine forests.

  • Operating in largely untested grape-growing territory with high elevations and a continental climate, Iruai Winery focuses on esoteric varieties that thrive in the Alps of Europe. As they develop their Scott Valley estate vineyard projects, they also purchase fruit and lease vineyards throughout the Shasta-Cascade, from the Trinity Alps of California to the Siskiyou Mountains of Southern Oregon.

  • Iruai Winery aims to create wines that embody a strong sense of place by using no additives and preserving the wine's natural character. Their vineyard philosophy focuses on allowing the vines to flourish as they would in the wild. In the cellar, they guide each fermentation process through its natural progression and evolution.

    Playful and buoyant, with notes of flint and chamomile tea, and a generous palate featuring ripe stone fruit and a mineral edge.

    Aromas of green apple, white flowers, and a hint of almond, with a complex interplay of citrus zest and underripe peach on the palate.

  • Iruai California Poulsard

    Notes of wild strawberries, rose petals, and a hint of earthiness, with light tannins and vibrant acidity.

  • Iruai Oregon Gamay

    Lively aromas of red cherries, raspberries, and a hint of white pepper. A juicy and vibrant palate withbright red fruit, subtle earthiness, and a touch of spice.

    Aromas of red currants, wild raspberries, and a hint of dried herbs; on the palate, light-bodied and elegant.
