NOK Vino

  • Nico Kimberly, founder of NOK VINO, is driven by a love for plants and the earth. He aspires to share this passion with others, promote ecological farming practices, and foster a welcoming and inclusive environment within the winemaking community. Kimberly believes that ecological agriculture has the power to create positive change, particularly on a local and regional scale, and NOK VINO is his contribution to this movement.

His journey began with nearly two years of invaluable experience working alongside the visionary team at La Garagista winery in Vermont. Their continued support and guidance remain a source of gratitude for Kimberly. Prior to his foray into winemaking, he explored various professions including restaurant service, cheesemaking, database design, and software sales. Ultimately, his preference for hands-on work and spending time outdoors led him to this new path.

  • NOK VINO sources its grapes from a network of New Hampshire vineyards that Nico Kimberly cultivates as "dynamic biological environments." These vineyards include:

Mountain View Vineyard (Walpole, NH): Established in 2006 at an elevation of 1300 feet, this vineyard boasts over 30 cold-hardy hybrid grape varieties.

Mermaid Hill Vineyard (Concord, NH): Planted in 2012 at 530 feet elevation, this vineyard features Marquette, Itasca, and l'Acadie grapes.

Podere San Lorenzo Vineyard (Central New Hampshire): This 1969 vineyard sits at 900 feet elevation and cultivates Marechal Foch, DeChaunac, Marquette, and Prairie Star grapes.

  • NOK VINO embraces minimal intervention to achieve the truest expression of the grapes. They even utilize the traditional, gentle method of foot stomping during fermentation. This allows them to closely monitor temperature and extract the essence of each vintage.

NOK Vino believes in utilizing everything the vine offers – juice, skins, stems, and seeds. This holistic approach, they believe, results in wines that are vibrant and authentic reflections of the vine and its environment throughout the year.

Natural yeasts, present on the grape skins, winery rafters, and even the winemaker themself, initiate fermentation. These "wild yeasts" are the true stars of the show, and NOK Vino sees their role as facilitating the ideal conditions for these yeasts to flourish and transform grape juice into wine.
